With that said I stumbled across this recipe from For the Love of Cooking for Grilled Corn Avocado and Tomato Salad with Honey Lime Dressing and I thought it sounded and looked delish!

I was determined to make it. I got home and I had all the ingredients but I wanted to make it a little bit different.
What I did…
I had 3 ears of corn on the cob. I didn’t feel like firing up the grill so I boiled them.
Cut the corn off the ear and fluffed it with a fork.
I cut up the tomato, mushrooms and red pepper and added it to the corn along with a avocado chopped up and my cut up chicken.
Instead of doing the Lime Honey dressing I made my own Honey Mustard Lemon dressing.
I used some honey mustard that I already had and I squirted some in a small mixing bowl. I added some lemon juice and a tad bit of EVOO and mixed it up. I tasted it and it was a little on the tart side so I also threw in a dash of sugar. PERFECTION!
Overall it was amazingly delish and I will be making it again!
