In the Kitchen Again

Yup Nikki has concocted another “recipe” all on her own!
So I was at work yesterday and decided that I wanted to make chicken salad. Random yes but hey that is how I roll. So I was on where else but pinterest and I found this pin…
and this one…
I thought they both looked delicious and figured I would put my own little spin on them.
I got home from work and went to work no pun intended! 
What you will need…
***Since I was not following a exact recipe I just swung it so***
1 package of boneless skinless chicken breasts
Chicken stock or water
2 avocados
Lemon juice just a little to prevent the apples and avocado from browning. 
Craisins to taste I personally used about a hand full. 
Grapes to taste I used about 15 to 20 of them cut in quarters.
Apples to taste I used one small apple I had sitting in my fridge left over from a Panera trip this weekend. 
Walnuts to taste I would say I used about 1/2 cup? Give or take. 
Salt and pepper to taste
Here is what I did.
I started by boiling the chicken stock and then threw in my chicken to let it cook. When it was done I took it out let it cool a little and cubed it up put it in a bowl and let it sit. 
Next, cube up your avocado and mash it up. I put it in the food processor with about a table spoon of lemon juice so it would be nice and creamy. Put that in with the chicken.
Chop up your apples into little chunks and toss with some lemon juice to so they wont turn brown. I used about a teaspoon for this. Throw that in with the chicken and avocado.
Chop up your grapes and throw that in the bowl as well. 
Add in some walnuts and craisins.
Stir that bad boy up and pop it in the fridge for about an hour or two and enjoy!
So frickin delicious! Now you can make this with mayo but if you know me or have read this you know that I do not like mayo which is why I used the avocado. 
Make it! It is so worth it!

    “not following an exact recipe”. how the heck do you do that? I can’t even cook with a recipe, let alone “wing it”. pretty impressive if you ask me. looks delish!

    i love chicken salad too but hate mayo. using avocado is a great and healthy alternative. i use greek yogurt. this recipe looks really yummy
