Recipe: Sun Dried Tomato Pesto Fish

Hey friends!
I am trying to get back into the swing of things here in the real world after being away for 2 weeks and let me tell you it is not the easiest thing to do.
With that said I am gonna give you a recipe today while I work on some recaps and some reviews that I have for you.

I originally saw this recipe over on Cara’s blog and when I saw it I KNEW I needed to make it and stat! Let me just tell you it is so super simple!

How amazing does that look?
What you need…
White Fish – I used tilapia.
Sun Dried Tomato Pesto to taste – I made my own by taking some sun dried tomatoes in oil I have at home in a food processer with some basil and blended it together so easy!
EVOO or Cooking spray – I used cooking spray.
Panko Bread Crumbs
What you do…
Preheat oven to 350* Line a cookie sheet with tin foil and spray with cooking spray or drizzle a little EVOO on it so the Fish don’t stick. Put the Fish on the foil and put the Sun Dried Tomato Pesto on the fish and sprinkle with some Panko Crumbs to taste. Put in the oven and let it cook till the fish is done about 15-20 minutes.
I served this with some salad simple! Enjoy!
