RECIPE: Carrot Bread

I have a treat for you today friends!
Remember how Mr. Big Truck and I have been juicing?
Well he wanted to try carrot juice.
We got to talking and we wanted to save the pulp and use it in something else.
Meatloaf, muffins, bread, something.
Last week I decided I was gonna make Carrot Pulp Bread.
2/3 Cup Vegetable Oil
3/4 Cup Honey
2 Eggs
1-1/2 Cups Carrot Pulp (I used what I had from juicing I didn’t measure it)
1-1/2 Cups of Whole Wheat Flour
1 Teaspoon of Cinnamon (I used Pumpkin Spice)
1 Teaspoon Baking Soda
1 Teaspoon Sea Salt (optional)
Mix OIL and HONEY together as well as you can.
Add the EGGS and mix.
If you are anything like I was the night I made this drop an egg on the floor and snap a picture of it!

Stir in remaining ingredients and mix well.

Pour mixture into GREASED Loaf pan and bake at 350* for 60-65 minutes.
Pull it out and enjoy!

    Looks delish! Did you know…. you can swap out oil for applesauce to cut cals and you’ll never taste the difference?

    I’m not a big believer of carrot came but how freaking thrifty are you guys, wanting to use the pulp in other foods?! So cool!
