Well friends welcome to Wednesday! We are halfway through the week. Accomplishment right there!
Sunday night Mr. Big Truck proudly announced that on Monday he was going to bake. I am talking puffed up chest and all. I was excited because the last time he decided to bake he made some yummy pumpkin spice cookies! I got home from work on Monday to find some yummy Zucchini Bread waiting for us!
I had Mr. Big Truck tell give me the recipe he used to share with you guys because when I tell you it was delicious it was DELICIOUS! Now this is actually the second time that Mr. Big Truck has made zucchini bread from scratch I might add and the first time it was good, however we both felt that it was a little on the sweet side. This time around he changed the original recipe a bit and we were both very happy with the way it came out!
You Will Need:
3 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
1 cup vegetable oil
3/4 cups brown sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts (optional)
What You Will Do:
1. Grease and flour baking pans and or muffin tins. Preheat oven to 325*
2. Sift flour, salt, baking powder, soda and cinnamon together.
3. Beat eggs, oil, vanilla and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Pour batter into prepared pans.
4. Bake for 40-60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan or muffin tins and cool completely.
When you are done snap a really flattering picture of yourself and send it to your spouse and see if it ends up on his or her blog.
